Lima Bean Yogurt Bowl

Fresh yogurt pairs well with the spice of seasoned lima beans and sweet figs.

Ingredients
  

  • 2 Cups Cooked Lima Beans Buy canned beans to save time. Or soak and cook dried beans if your prefer.
  • 1 Cup Fresh Yogurt
  • 1 Cucumber Diced
  • 8 Oz Figs Diced
  • 1/2 Cup Soy beans
  • 1/2 Cup Olives & Marinated Peppers Optional
  • 1 Cup Fresh Herbs
  • Bread Optional
  • 1 tsp Spices of your choosing
  • 1 tsp Salt & Pepper

Method
 

  1. Preheat oven to 425
  2. Season lima beans with seasoning of your choosing and spread them flat onto a baking tray.
  3. Once the oven is hot, place the tray with lima beans in the oven for 10-12 minutes.
  4. While the beans are cooking, prep your yogurt bowl. Scoop out 1/4 cup of yogurt into 4 bowls and season with salt and pepper.
  5. Place the ingredients on top of the yogurt in each bowl.
  6. Once the beans are finished, add them to the bowls. Serve and enjoy!
